PFC Favourite: Baked Parsnip Fries w/ Curried Mayo Dip


  • 6 medium-large parsnips, peeled and cut into 1/4-1/2 inch thick sticks
  • 1 Tbsp. vegetable oil
  • Salt & pepper
  • 1/4 cup mayonnaise
  • 1/4 tsp. mild curry powder

Preheat oven to 425 degrees F. Put the parsnips into a large bowl and drizzle them with the vegetable oil. Sprinkle in a bit of salt and pepper and toss to coat.

Spread the parsnips out onto a large parchment paper lined baking sheet in a single layer. Bake for 15 minutes, flip and then bake for another 15-25 minutes. They should be browned and a bit crispy on the edges when finished.

To make the curried mayo, mix together the mayo and curry powder until well blended.

Serve the parsnip fries right away with the curried mayo as a dipping sauce.
